There is no HW SETUP - steel sheet profile
Maybe I am blind, maybe I turned the menu off somehow, but I can not find HW SETUP in my printer. So how to make steel sheet profile in Core One?

On the Core One (like the MK4S before it) there is no way to store a sheet profile as there is no need to store z-offset values for different sheets. The Core One probes the bed surface prior to every print (using the load cell in the Nextruder) to establish the first layer height and create a mesh bed levelling map for the printer. Just swap in whichever sheet you prefer to use and hit print.
