RE: Max chamber fan limit set via gcode (chamber fans,)
Sadly, it's not in any official documentation, so someone would need to look into the firmware (you can download the code on GitHub).
What I've found out, is that you can use M106 Px S0..255 for the different fans. P3 seem to be the chamber fans. P0 and P1 are heatbreak and nozzle fans.
P2 seems to be the filtration fan.
Resetting to "auto mode" apparently can be done via M106 Px R.
So sadly, there's no information about the limit. I'm not sure if there's even a command to change it or whether the menu setting is directly connected to a variable.

Thanks. That worked fine for me.
I had the problem with PETG, that the camber fans started late, when the printed object already was about 1 cm high.
I now inserted
M106 P3 S100
into the Start G-code of my filament settings for my PETG and that works fine now!
It now starts the chamber fans from the beginning with about 40%
