You could, except the connectors will not fit. The Einsy doesn't use standard Molex KK™ 3-pin fan connectors, it uses Molex SL™ series 3-pin connectors.
But you definitely can build yourself an Y-cable using the SL connectors or the cheaper "Dupont" non-keyed connectors. Just connect black to black, red to red and yellow only to the extruder fan.
And it'll cool the Einsy at the right time, too, because the extruder fan has to be spinning for the printer to be able to print.

I connected the fan up and everything is running well... I will run it again in the am as I could not hear it... very quiet. I will be adding an internal air scoop to run the air behind the board, as I understand this is where the cooling is needed most. The vented Z door will provide the best place for the air to escape.
Oddly enough, I could not find Molex connectors in local electronic stores, and it was difficult to find adequate sources even online. But the Noctua fan came with telephone wire splicers, I found a similar one that T splices, the green one. see image.
Next time I will buy the fan from Prusa, and it will be cabled more easily.

Indeed, the back of the Einsy is where you need to cool most. Adding heatsinks to the backs opposing the TMC2130's on the front helps even more.

You'd need to go to Digikey, Mouser, Arrow, Farnell, TME or similar. The smaller electronic stores will only have the "Dupont" non-keyed compatible connectors.
