Is the 3mm Plexiglass strong/stiff enough

Yes, it is. But do not place any things on it. Neither use my "hanging" spool holder.

you would propose to go for 600 mm in X

Correct.

So width and depth are both 600

Correct.

Is the height enough to put a 5 cm stone paver under the printer?

Add additional 5cm in height.

Is there a particulate reason that you did not use "hinges" to create a swinging door?

Yes, it is. The 3mm is to weak for a swinging door. Sooner or later it will break at the hinges.

Very nice enclosure! One question, have you experienced any issues with the printer since the enclosure is sealed ( no vents). I was concerned with it getting too hot inside the enclosure.

No problem.

Inside temperature is about 30 degress.

About 10 degrees above room temperature.

Actually isn't there a small amount of ventilation from the holes that were drilled in the corners, or were those sealed up?

The biggest "ventilation" is the door itself. It's not sealed and there is a liite 1mm gap roundabount.

Re: YAC - Yet another cabinet - Housing

Thank you for all the information on your enclosure. My home office, where the printer is setup, is on the drafty and cool side (not to mention a bit dusty) so I decided I wanted something to help make more consistent prints and keep the printer clean when not using it.

My version! Rubber feet keep it quiet (along with some foam bits wedged in the frame to keep the acrylic quiet) and not squish the power and LED light cable. Just used some inexpensive LED light tape on the inside of the extrusion. I also went larger as I had the room to do so. The front panel just hangs on 2 M4 screws in the top extrusion and will have 2 handles to move it to the left side (they are what is printing in the image) and one more handle on top to facilitate lifting the whole enclosure off to work on the printer and replace bits. I couldn't find the aluminum corner brackets you linked to locally so I ended up printing some 20mm cubes from Thingiverse in PLA as proof of concept but they have worked fine so keeping them for the time being. Might do some in PETG when I get time but certainly fine as is.

Re: YAC - Yet another cabinet - Housing

I've been collecting information from different designs for my enclosure for when my printer shows up and I'm glad I haven't built it yet. With the announcements of the MMU v2.0 it changes everything in size.
