What G-code flavor? Marlin (legacy)?
What G-code flavor should we be using?
My Prusaslicer default is Marlin (legacy).
There are 12 options:
- Reprap/Sprinter
- Reprap firmware
- Repetier
- Teacup
- Makerware (Makerbot)
- Marlin (legacy)
- Marlin 2
- Sailfish (makerbot)
- Mach3 (LinuxCNC)
- Machinekit
- Smoothie
- No Extrusion

Well you posted in the mk3 forum so we assume you have a mk3. In which case it is marlin legacy. Just like should be configured when you run the wizard and install your printer.
If you don’t have a mk3 then you would. Goose the one that matched your printers firmware.

Yes - I just put together my Original Prusa MK3S+.
Where does it say in the documentation that we are Marlin (legacy)?
Gone through all my documents, can’t find that stated anywhere.
I assumed that’s what we were from the default in the Prusa Slicer.

When you say default in prusa slicer what exactly do you mean ? I hope you have run the add printer wizard and selected the model that matches what you have assembled. That will install all the correct profiles for your machine, all ready, tuned and tested by Prusa for their machines. There should be no initial setting up required, at least for the profiles themselves until you have gotten used to your particular machine. If you have installed the profile then its setup for you. If you examine the contents then you will see it is Marlin Legacy.
If you haven't installed the proper machine then the Prusa Slicer 'defaults' actually have very little to do with the required settings for a Prusa Machine. Most of them are left over on what they were when Prusa ported it from the original Slic3r. Ignore the tooltip defaults, they mean absolutely nothing in relation to a modern machine.
You will of course need to correctly dial the live z in (better than the built in method) as that only gets you 'into the ball park' as the saying goes. However that is a printer settings and not part of the slicing profiles.

Yes, the default is Marlin legacy.
I was looking through the documents to confirm that Marlin (legacy) was correct - and that it should not be say Marlin 2.
I was checking all the settings in the PrusaSlicer to try to adjust the Goode for the Eclipson plant from LW-PLA to PLA.
Haven’t figured out the correct settings yet.

You do not have to check the settings, if you have an original Prusa MK3S+ all the settings in the "Printer settings" are ok - that's the point of having those profiles. You might want to optimize the gcode sections for your general needs (oozing etc) but you definitely do not have to change "printer settings" for different filaments.
If you want to print with a filament that does not have a preset filament profile you select the "generic xxx" filament profile (xxx being the material you use or what's closest to it) change al least one parameter and save the settings using the name of the filament -> new filament profile.
Last but not least adjust the "print settings" according your model's requirements.
That's why printer, filament and print settings are separated.
