I think you're going to have a difficult time printing that. My wife likes to make anisette cookies and I had designed something as a one time use thing to help her cut the strips. it had a similar thin edge to it. it becomes problematic when you are getting down to an edge that's one perimeter thick. I'd be interested in wisdom of the ancients here as well 🙂

Cookie cutters don't need to be knife-sharp. 5 perimeters wide going down to 1 at 45 degrees from both sides will be fine. Yes, that's a short, strong edge on a thickish wall.
Your dough will tend to stick between layers unless you coat the print with a food safe epoxy or acrylic.

If the cutter shape is complex consider making a pusher; a plate the same shape but about 2mm smaller all round to push out the dough without tearing.

yeah I sort of convinced my wife it wasn't a good idea even if you have the steel nozzle since you have to worry about the lubricant etc in the gears and that printer has to be dedicated for the purpose and never print anything else before it prints the food-grade stuff. Seemed like too much of a hassle lol But I see where you're coming from.

If you want to try it thin, make it a vase print model, PETG and run it at prusament PETG settings. You can do the thick bottom and a thin ridge - you won't be able to vase print the two thicknesses above the base.
