After I have sliced a model, how can I reopen it in slicer at a later point, and see it with all the printer setting I applied
I confess to not fully reading the Prusa slicer info yet, But one thing that I thought might be obvious to do is not for me.
After I slice a model and export my g code, and then close slicer, how can I in the future revisit that model in slicer to review how I sliced it, what settings did I use, and look at the sliced preview again.

Save it as a project 3MF file. That will save to STL and all slicer settings for later reuse .

As Bob says the best way is to save project as which saves everything, models, modifiers, placement etc as well as all your settings.
However if all you want to do is check what your print settings were you can open up a new slicer session, and using File>Import>Import Config from Project you can select a previously sliced gcode file which will load in all the print settings that were used to slice it. Slicer stores them in the actual gcode at the end of the file. This method though doesn't store the stl file(s) or any modifiers etc so is a lot more limited than saving it as a 3mf which is the best way to do it.
