Is it possible to buy the Original Prusa i3 MK3S kit without the printed parts?
I would like to print the parts myself: https://www.prusa3d.com/prusa-i3-printable-parts/

I don't think so.
I'm working with their help people to purchase a standard extruder assembly, much the same way one would purchase the MMU2, but to no success. I then asked about purchasing all the non-printable parts separately. I assume it's possible but don't want to risk missing something.

The cost of the printed parts is inconsequential to the rest; the parts are available separately in the store but if you add up the total costs of all the mechanics/electronics it'll be pretty close, if not more owing to the discounted shipping for a kit. The plastic parts in one-offs are a bit pricey in the store but I suspect that's just because payment processing fees and someone's time are needed to actually send that to you (in other words, don't expect a kit sans plastic parts to cost $750 minus the sum of all plastic parts in the e-shop)
Just get the standard kit and rest secure knowing you will have spares on hand if you print your own anyway.
