Every so often while printing my printer will beeb and go into the menu does this happen to any one else?
it a weird bug. But randomly my printer will be and go into the first tier of the menu for no reason. Kinda makes it feel like my house is haunted lol

Try to remove LCD knob and see if same happens. Do you hear any buzzer sound when it enter on the menu?

ill try to remove the knob good idea. not sure what you meen buzzer sound

When you click the knob it make a click sound from the lcd speaker, does the printer do that when auto open the menu?

Well firmware don't have that bug, so it may be a hardware problem.
Remove LCD, clean pins and pot with IPA
