Z axis calibration problems
I am at the step in calibration where I put a piece of paper under the extruder (with no steel sheet, I haven't been told to put it on, but it seems like I should). When the extruder catches on the paper I shut off the printer Immediately like the instructions tell me to, but when I come back to the wizard it just does the same thing. I've done this three or four times, is there something I'm missing?

Yeah, read those instructions again. It says that IF the nozzle catches the paper, turn off the printer (save the nozzle!). Not when the printer catches the paper ... So the IF is a safety out - not the expected path. Do read the rest of the instructions - that tell you that you gotta adjust it some more...

If the nozzle catch the paper you have pinda probe too high.
