Can't even complete a first layer test?
My first print went off relatively smoothly, but now no matter how I play with settings it seems within a couple inches I get build up on the nozzle instead of the filament winding up sticking. Do I need to clean the nozzle better? Play with temperature settings? I'm using stock pla that came with the mk3s+ and I've noticed that even while preparing for a first layer test the nozzle seems to leak a centimeter or so.
When it does come out smoothly the sine wave at the beginning of the test ends up looking more analog than digital, dragging some of the filament behind when it should be making a sharp corner. This would seem to indicate to me that I'm too high, yet when it finally prints out the small patch at the end it definitely seems squished which would indicate too low. My calibration and bed level settings always say everything checks out... I desperately want to figure out how to make this work but I'm starting to wonder if I don't have the patience /mental acuity to understand and fine tune the settings.

It does sound like your z-offset is too high.
The nozzle leaking a centimeter or so is normal.
The z-offset is the one most essential setting to get right. Please run a first layer calibration and post of photo of your results.
There are a couple other things to check: make sure there aren't any bits of filament under the smooth sheet. And it might help to switch to 7x7 bed leveling.
You will get there.
