Adhesion issues with PLA on smooth sheet

I'm going to try and keep this short and straight to the point.
I bought the MK3S+ at work last year. I initially started on the smooth sheet with 3 x 3 bed leveling. I only made 1 or 2 huge prints with PLA so I didn't get to test it a whole lot in that configuration, but the results were great.
Then, I switched to the sating sheet to print PETG. I struggled for a while but ultimately I got it. I had to switch bed leveling from 3 x 3 to 7 x 7, readjusted nozzle distance with live-z and adhesion issues with PETG disappeared.
Then, I started making more prints with PLA and that's when my issues started. I kept bed leveling at 7 x 7 instead of going back to 3 x 3 and first thing I noticed is that I had to change my nozzle distance by a lot, I believe it might've been as much as 0.3 or 0.4mm. No big deal, readjusted the nozzle distance with live-z and started making prints.
Problem is, I cannot get a single flawless print now. On the yoda, the front supports ended falling off. I tried to save it by keeping it down with tape but it ended up failing anyway. On the black object, I noticed the corners start to lift off and then when the top solid layer is layed down, that's when it lifts off even more.
Also, I have tried making the yoda with PLA on the satin sheet, but it started coming off as well.
I print with generic setting in the slicer - 215C/210C, 60C bed.
I attached some pictures. I hope they provide enough clues. Do I have to keep dialing in the Z distance or is there a greater underlying issue here?
