Z-Adjust Causing Major Issues

My printer has started to act very strange. To begin, my Z-Adjust started to not let me select negative values. When I would turn the knob to negative, it goes from 0.000 to 9.999. When I print a file now, off of one of my own SD cards, the print begins, and then the Z axis moves up about ~30 mm, and prints normally, except for not being on the bed. I printed a file that I sliced on my own, and while the z-adjust didn't work, lowering and raising the value actually did change the offset.
Additionally, I have had issues calibrating-z since the first few starts; the z-axis was pushing down on the board and bending it. It doesn't do it when you print, but only occasionally when the calibrate-z option is selected. I am slightly worried that I may have a broken bed, or a broken control board. I have updated the firmware a few times to no avail. I am not sure if there is a hard reset/memory wipe that I could do, but would be open to reverting my RAMBo to factory fresh settings. Any advice is appreciated.

I had the same issue with the Z axis adjust going from 0.000 to 9.999 when I went counterclockwise on the dial. It turns out that the adjust was at like 30mm . I turned the knob counterclockwise through three cycles of 0.000 - 9.999 until it finally went to negative numbers.

Still having adhesion issues but I did as you suggested and got my z-adjust back to normal, and cranked it way down. I feel like its squishing too much but we will see. Adjusted the pinda probe as well and the gantry hasn't crashed so Im alright with that. Since i turned high power on though I am hearing a harsh vibration in the z-axis. The fun never ends!
