Suddenly messed up prints
Hi Forum,
since the beginning ( about a month ago ) our printer produced very good results.
But within a larger print ( ~14h ) our printer started to mess up with the filament the last 4 hours. The first layers where perfect but then it starts getting fibrous, more looking like straw then a 3D print.
We tried a lot since that (re-calibrating, cleaning and changing the nozzle, clean up the extruder...). The v2calibration still looks not as good as at the beginning.
We are relatively new to the 3d printing thing, maybe we are missing something?

Again I tried to clean up the nozzle. This helped a bit. The first line on the very edge of the bed seems fine now, but within a print there is still too few filament. Any ideas?

This could be a number of things:
1) Clogged nozzle or extruder (but your start line looks okay
2) Filament not free to flow into extruder (spool holder has too much resistance, filament tangled)
3) Poor tension setting on extruder. Should be about 14mm without filament in it <- Check this first.
4) Hob pulley on extruder loose (small set screw backed out)
5) Bad wiring to stepper motor.
It also looks like your Live adjust Z is not set very well. This can make it worse. If it is too low (which I think yours is) the nozzle drags the filament around instead of gently squishing it. A step by step instructions here:

Also, why use Blue Tape when you have a nice PEI surface? The bumpiness of the tape will make things worse and is not needed.
If you keep the PEI clean, and have a good Live Adjust Z value set, you will find the PEI is a great surface.
