Inconsistent Bed Leveling

I just recently used the kit to upgrade my MK1 to an MK2 and I have to say, I am pretty disappointed with the inconsistencies I am experiencing. The Z-Calibration will not work consistently what so ever. If i change filament, start a new print, or even just turn it off and turn it back on I will have to spend at least 10 minutes trying to fix it.
It started two days ago when I first assembled it. I was having some trouble getting the bed level correctly, but once I did, I printed out a Benchy and it was about 90% fine. When I got to my printer yesterday and turned it n and ran the z-calibration it ran the extruder into the bed. After a lot of hassle and trying to fix it, I relegated to disassembling and reassembling the printer entirely. This time, I used digital calipers to make sure everything was the perfect measurement and everything was flat. All four feet are flat, even with the z-frame installed. When I was calibrating it, I did the live z-axis calibration with SIlver PLA filament. I noticed the left side of the bed is very slightly lower than the right. Eventually I get the z-axis calibrated, and then switch filaments to ABS so I can print my Benchy file. When I do the z-axis calibration again, I have to do the live calibration again and for some reason switching from PLA to ABS requires me to drop the z-axis by about 0.7mm. When i switch back to PLA I need to raise it again.
Eventually I settle in with my ABS and start the benchy. I came back today to the Benchy being fine. Great! Time to print my parts that I actually need. TUrn on my printer, start the g-code, and then when it does the auto-leveling before the print it slams the extruder right into the bed again.
I have spent three days trying to get my printer up and running consistently to no avail. I never had this many issues calibrating my MK1. It took one day to set up and then I didn't have to recalibrate it for months. I am really discouraged that I spent moneya dn so much time one something that will not run consistently, and more importantly, is holding my work back.
