MMU "Waste Blocks"
A general question,
Can you change the size / amount of filament extruded to the block when it is changing colors?

Yes you can. But only the one setting for all extruders/colors, it's described here
As an example, these are wipe towers for the same model, the smaller one is default setting (15mm for the "per color change depth") and the bigger one is 20mm. Unfortunately in my case (the black and the green bleeding into white) it made very little difference.
