MK3S will run fine with 0.6 mm (and 0.25, 0.8) nozzle. It's officially supported and there are dedicated factory presets in Prusa Slicer for all four standard nozzle sizes. Of course you have to slice your model for the exact nozzle diameter. That being said, I personally would not consider changing the nozzle on a print-to-print basis a viable solution. The hot-tightening procedure is involved, tedious and error-prone in my opinion. You have to strictly follow the procedure described at https://help.prusa3d.com/article/changing-or-replacing-the-nozzle-mk2-5s-mk3s-mk3s_2069 and you could still mess things up like I did. It's only after I switched to RapidChange Revo Six that I'm comfortable with changing nozzles between prints. In fact, what triggered me to switch to Revo was when I accidentally ruined my original V6 hotend during a failed hot-tightening. Full disclosure: it very well might be just me being doofus as I see some people have no trouble changing their classic V6 nozzles without ruining the whole thing.
