Has Prusa provided which NFC chip they are using in their OpenprintTags?

No, their sites say they will provide it soon, which does not state any deadline.

See my GitHub and printables.com for some 3d stuff that you may like.

Yes the OpenPrintTag site doesn’t contain hardware specifications however Prusa is already selling tags : https://www.prusa3d.com/product/blank-openprinttag-10-nfc-tags/

…which of course contain a chip.

I hope the industry adopts this or a similar measure.

While the hardware specification is still marked as "Coming Soon" on the front OpenPrintTag page, the software specification has plenty of hardware/physical specifications in it. Specifically this page states:

The standard was designed with ICODE SLIX2 320 B tag in mind, but it is meant be compatible with all NFC-V tags.

I suppose any NFC-V (type 5) tag will work as long as it has >= 313 bytes usable storage. I guess though to be useful it needs a large enough antenna. I've experimented with these: iCode SLIX2 Sticker Label and they indeed work but as good as the OpenPrintTag versions since the later has a much larger antenna and thus greater range.
