Why are my prints turning out blotchy and brown?
I'm using standard white ESun PLA+.
I'm printing what I'd generally call quite a simple model that I think the prusa could handle, but I'm getting a few issues.
#1 is there's a lot of gaps and random dots on the surface finish - as well as that, there's some brown artifacts too, which I assume is filament getting stuck to the nozzle, and then depositing on the print. Then I'm also getting some details detaching themselves due to blobs forming and the printhead catching on them and snapping them. Oh and also in the image is these weird layering 'cracks' forming...
Have tried with input shaper on and off and I get similar defects, although input shaper is slightly better. Images below:
Any ideas what could be causing this?
It's pretty much a completely stock PLA profile too!

Assuming that you've had better luck with this filament before.
Looking at your print, it appears to me that your are experiencing inconsistent extrusion. This print appears to have layer delamination in the upper portion and curling an blobbing filament artifacts in numerous spots. In my experience the E-Sun PLA+ is one of them more difficult PLA filaments to print because of these vary problems. I also had more bed adhesion problems with this product than any other PLA filament I've used. Its' funny because one my work associates swears by this product.
I know that some of us are relentless about this sentiment, but all of the negative attributes in you pic could be cause by excessive filament moisture. There are other causes, but in my case drying the filament always improved these type of print defects. PLA is supposed to by less hydroscopic, but that doesn't mean it wont absorb moisture. I don't know you location, but I live in the Seattle area, and currently my house is running at about 57% RH. To ensure I don't experinence these type issues, I have to keep all my filament in droboxes with desiccant or I have problems.
What I would do in your case is run an experiment to determine if wet filament is the culprit,
1. try this print with a different filament, preferably a filament that may not have been exposed to air for a shorter period. (not proof positive but it helps)
2. dry this filament and try again.

I just realised though that this is actually eSun ABS+! ABS being even harder to print with is probably even worse than described above - so I'll dry it and see what happens - but also consider other filament!

Its unfortunate that the industry is not better at explaining the nuances of printer and filament management as they market their projects. I guess that might scare people away.
