I also have issues with prints lifting on my mk4, especially with the textured sheet and petg or pla. I printed this with a clean textured plate and petg, with the enclosure closed and the front right in that image still lifted off the bed.

I would be interested in seeing a comparison of the slicer settings for the same everything except different printer. Maybe the slicer has a different parts fan speed on one? Also, have you taken temperature readings of the heatbeds at various spots? It would be also interesting to have temperatures taken of the print at various times to see if the parts cooling is affecting the part differently for each machine.
I've not had any issues printing on the entire build plate, so I think there's something specific to your system that is an issue.
In terms of the automatic Z, I wholeheartedly disagree with you. I really like the automatic calculation. I can switch plates with no issues and it just works. If you want different z-offsets per plate, you can build that into a profile in the slicer and go that route. The automatic Z probably opens a lot of options that we haven't pushed yet. There was someone later printing on a transparency, then putting that on the build plate, and the ink would transfer to the print... automatic Z makes that much easier to accomplish.
I have 4 pieces of MK3s (2 of them are upgraded MK3), my experiences with MK4 are mostly bad.
To explainI am printing solely PLA, and on the textured plate.
1) All my MK3s are able to print the large object without warping or any issues. The MK4 cannot. no matter how I do set the z offset, or set the temperature of the heatbed or use the sticky spray, no matter how deep I clean the textured plate - there is always an issue with warping. While the same plate on the MK3s has excellent print of 18x18x3cm block - no warping, no issues - without the spray. No way I could print it on MK4

You have very interesting problem, my mk4 only prints PLA and PETG without any issue unless adjust bad temperature with thermal camera to be inline with material specification. FLEX/ASA/PC is not possible first overheats in extruder due to heat accumulation and jams, rest from unknown reason warps.
Brim/skirt/glue/no fan does not work only reduce effect a a little bit. Can you measure bed temperature and nozzle temperature? on mk3 and mk4?
