Prusament is frequently out of stock even during calm times of the year. Things are probably getting way worse before Christmas. So I'd say capacity. Eventually all of the choices should get in stock again. But if you want something specific it would be best to let Prusa notify you per e-mail when it comes back. Some specific offers might sell out fairly quick again.
It seems to me Prusa has to overcome some serious scaling/growing issues in their business currently, not just when it comes to filament. Add to that the increasingly harder competition ...

They keep adding production lines but still can't keep up with demand ... it can be dangerous expanding too quickly but the underlying cause is the product's undeniable popularity.
