Descriptions of different Prusa filaments?

Does Prusa have anywhere a detailed description of the different filaments they sell and what type of application each would have?

Yes, im a newb and am just about to push the purchase button on the Mk3S and thought id buy a different filament as well (though its totally unclear what filament you do get when you buy the printer :/ )

Outside of Prusa not having any information on their filaments, can anyone recommend a good reference source for me to read what types of filaments are suited to what type of application?

Press on "Detail" under the filament you want to know more about, then download the "tech sheet" from the page. 

For example, this is the one for PLA: https://prusament.com/media/2020/01/PLA_TechSheet_ENG.pdf  

They're quite detailed and definitely worth a look 😉

There is also a general guide to different filament types in the Handbook. See https://www.prusa3d.com/drivers/ to download the latest handbook in a small handful of different languages. In the current English version (v3.12) the section on different filament types is on page 56, and is section 12, "Materials".

Even if you don't have a MK3S, there is a lot of general information in that handbook that is useful (granted all the specific details are for the MK3S line). There is also handbooks for the other printers that Prusa sells, presumably the generalized information in them is similar with only the details changed for the specific printer (I haven't reviewed them). The outlier would probably be the SL1 handbook simply because it is a different printing technology, but based on the MK3S handbook I would suspect that it also has a lot of good general information for MSLA printing with details for the SL1.

contains a chapter about filaments and their uses, along with some general information which can always be handy 🙂
